I really envy those people who are good cook. I tried cooking several dishes but I ended up getting disappointed most of the time. But if I was satisfied of what I cooked and then will cook the same dish the second time, weird as it sounds but it usually did not taste the same. I am really wondering how cooks make even the simplest dish very tasty.

My brother is a good cook. He is not a professional cook though but I love the foods he was cooking while I was living in the Philippines. In fact every time I visited my family, I always asked him to cook chicken adobo and make me "kinilaw"(Ceviche) but a filipino version which is a little bit different from the ceviche we have here in the US. He is so picky when it comes to the
knives he is going to use when he cooks. He loves using his very sharp single blade
pocket knife or the
folding knife he bought from his friend in making fish ceviche. If his knives are missing he will not make ceviche, but if he does you have to beg him first or even lure him.
More than a year ago I sent my family in the Philippines a package and I included few
knifes because my brother had been bugging me for awhile to send him the same knife I gave him a year after I was been here in the US. He broke the blade and split it in half while he was using it.
Since I am going to visit my family once again probably by March next year, I am already anxious not only to see my family, friends and relatives but also to eat the foods that I used to eat way back then. Well, time runs so quickly and few more sleeps, I will be in the Philippines eating chicken adobo and "kinilaw."
